Piri Piri Prawns
This spicy Prawn dish is lovely served with French Bread to soak up the spicy sauce.
Ingredients:
- 1 Tbsp Ground Paprika
- 1/2 tsp Fine Sea Salt
- 6 long fresh red Chillies
- 1 Garlic clove crushed
- 2 Tbsp shredded Basil leaves
- 350g cooked peeled fresh Prawns
- 3 Tbsp White Wine Vinegar
- 100ml Sunflower Oil
- Lemon or Lime to serve
Method:
- Pre-heat the oven to 180 degrees
- Brush Chillies with Oil and roast for 8-10 minutes, allow to cool then chop
- Add the Chillies, Garlic, Paprika, Vinegar, Sea Salt and 80ml of the Oil to a pan and cook over a low to medium heat for 2-3 minutes
- Allow to cool and blend until smooth (this sauce can be made the day before and stored in the fridge until needed to save time)
- Toss the Prawns in 3 Tbsp of the mixture
- Heat the remaining Oil in a pan and add the coated Prawns
- Cook on a high heat for 4 minutes stirring from time to time
- When cooked remove from the heat, toss in the Basil and serve with the Lemon or Lime and French Bread.
